Khao Soi Chicken

Directions:
- Heat the vegetable oil in the pot, add Thai-Choice Red Curry Paste and Thai-Choice Yellow Curry Paste. Stir-fry until the paste is dissolved. Add 200 ml Thai-Choice Coconut Milk and simmer it until it starts boiling.
- Add Chicken drumsticks and cook for 5 minutes. Then, turn down the heat to medium and add the rest of the Coconut Milk. Simmer for 20 minutes until the chicken is tender. Add Thai-Choice Fish
Sauce, Thai-Choice Coconut Palm Sugar and 120 ml water. Continue to cook until it starts boiling. Then turn off the heat. - Cook Thai-Choice Brown Rice Noodles in boiling water for 5 minutes or until soft. Rinse the noodle in cold water, drain well and set aside.
- Serve the noodle in a serving bowl. Then pour the Khao Soi broth with chicken drumsticks. Served with dried chilies, sliced shallots and diced Thai-Choice Pickled Mustard. Garnish with spring onion and coriander. Ready to serve.
