1. Mix Thai-Choice Instant Coconut Powder in warm
water and stir well to make Coconut Milk. Set aside.
2. Heat vegetable oil in a sauce pan or wok, add Thai-Choice
Green Curry Paste and stir well for 2 minutes.
3. Add beef and continue to stir-fry for 2 minutes,
then add Coconut Milk. Bring to boil.
4. Reduce heat, add sugar and eggplants, stir well.
Simmer for 5 minutes. Serve hot over steamed Thai-Choice
